Darwin Brewing Co, initially Nightcliff Brewing Co., has a vision to revolutionise the craft beer industry in the Northern Territory and it all starts with wort.
Wort is the liquid extracted from the mashing process during the first steps of brewing of beer. It is a sugary water created from grains, which becomes the base for fermentation. It is fundamental to brewing, feeding the yeast to produce alcohol and flavour in the beverage.
Until now, locally brewed wort was unavailable to brewers in the Northern Territory.
Ryan Lucas, owner and General Manager of Darwin Brewing Co and Darwin Brewing Supplies saw an opportunity to fill this gap in the market in 2020. With support from the Business Innovation Program 2.0 (BIP) Darwin Brewing Co. has grown to meet local demand.
He explains, ‘Territorians appreciate good taste, and they know what they like. As the craft beer scene grows and matures, we’re on a mission to guide brewers in making the best tasting beers around!’
Craft beer production and tourism is intertwined with innovation, passion, and a relentless pursuit of quality. With advances in technology, innovation in storage and air conditioning facilities brewing in high temperatures is now possible.
“I am always asked whether the high temperatures in the Northern Territory affect quality, simply… no they don’t,” Ryan explains.
"I firmly believe that what we’re pioneering here at Darwin Brewing Co with our wort production isn't just brewing, it's a revolution for the entire Northern Territory craft beer industry.
“We’re opening a gateway for other venues and hospitality operators to step into the market, facilitating the new tourism opportunities, and steering the industry toward the next exciting phase of innovation."
The funding assistance provided under BIP 2.0 and the support by business advisor Kate Russell from the Darwin Innovation Hub has been crucial in leveraging innovative solutions, technological advancements, and operational efficiencies. This support has allowed Darwin Brewing Co. to introduce new recipes and expand their own product lines.
This venture represents more than just business innovation; it’s about elevating the entire craft beer industry in the Northern Territory, expanding craft beer tourism, and refining consumer palates, contributing to the socio-economic fabric of Darwin and beyond.
